getting closer to summer - amended w/ recipe
Yesterday was the first time we ate salad pizza - surely a sign that summer is on its way. It is one of our favourites. Homemade pizza dough grilled on the BBQ - slathered with black olive tapenade and topped with a salad full of goodness - lettuce, red onion, sprouts and avacado. We serve with chicken and / or salmon. Or sometimes we just eat the bread and salad.
*** pizza dough recipe
4 cups flour
2 tsp salt
1 tsp sugar
2 pck quick rising yeast
1 3/4 c very warm water + 2 tsp olive oil
Mix all the dry ingredients. Add the water and oil. Knead about 10 minutes. Rub dough with some more olive oil. Cover with damp cloth and let rise in draft free area about 15 minutes. Punch down. Separate into 8 pieces. Stretch and brush with olive oil and grill. Serious yum.
Sample final exams are strewn all over the kitchen. English. Science and Mathematics. In two weeks we will be done with grade 10. Done. Summer jobs are next on the agenda.
The rain has returned.
Game day. Stanley Cup is in the building. Go Canucks Go!
